I Love Pistachios So Much That I...

I normally purchase Il Colle Del Gusto Sicilian Pistachio Spread when I travel to Colonial Williamsburg, but as much as I love visiting the powdered-wig capital of the Eastern seaboard, the three-hour trip isn’t always feasible.

That’s why I was overjoyed when I saw my beloved pistachio spread listed online with Milk Street. (Pro tip: You save 10% if you buy it in pairs.)

Friends, I prefer it over Nutella. Yes, Nutella. It’s creamy, nutty, sweet (but not cloyingly so), and just a touch savory, thanks to the groundingly fruity flavor of extra-virgin olive oil. Some days, it’s the single most powerful reason that I go to work — just so I can buy more pistachio spread.

Given my lifelong devotion to Pistacia vera, when I saw Táche pistachio milk on the Thrive Market website, I decided to give it a try. Oh, friends.

It tastes like melted pistachio ice cream — without the sugar. And that’s the unsweetened blend — I’d place bets that the original blend (which has just 7 grams of sugar per cup) would taste even more like melted pistachio ice cream.

It’s nutty, creamy, and oh MY does it froth like a champ — we’re talking bouncy, marshmallowy, still-some-left-at-the-bottom-of-the-mug-when-you’re-done frothy. It’s positively luscious, and makes my morning matcha extra special.

When, approximately seven years ago, a coworker told me she was going to bring a Watergate cake into the office, I was immediately skeptical. I pictured housewives with beehives serving up a super-sweet concoction of marshmallows, Cool Whip, and coconut. Basically, my brain heard “Watergate” and pictured “ambrosia.” Actually, it wasn’t that far off.

Both desserts have whipped topping and coconut … but what sets the Watergate cake apart? The addition of pistachio pudding mix to the white cake mix. It’s Southern genius, I tell you.

Now, all I need is a solidly delicious gluten-free white cake mix to use…
