Meal Plan Monday

Uuuuuggggghhhhh why didn’t anyone tell me it would be this hard to eat healthy during the holidays (which, according to my stomach, starts as soon as the Halloween candy hits the stores)??

All these damn indulgences – Halloween candy (which the one pregnant woman at work keeps restocking – I think she’s trying to make the rest of us gain thirty pregnancy pounds right along with her), pumpkin beer, party food, football snacks.

And don’t get me started on my mammalian instincts kicking in – you know, the ones that tell me to fatten up as much as possible and move around as little as possible in preparation for the long, cold winter. Sure, everyone’s on board with the idea that we should eat like cave people, but the second we talk about hibernation, all of a sudden we’re lazy. Don’t try to tell me the cave people didn’t stay the eff inside and sleep when it was blizzard-ing out.

I’m still doing the “right” things: eating healthy dinners and leftovers for lunch, working out at least three times a week, getting plenty of sleep, drinking lots of water, etc. But it’s getting harder and harder to do them.

I took out my frustrations by grabbing a cordless drill and a pumpkin, and it actually turned out really well:

We’re pulling recipes from a variety of sources this week; Pinterest, America’s Test Kitchen, blogs I follow…oh, and Friday’s chicken nugget salad? That’s our own brainchild – because apparently we like to pretend we’re eight years old sometimes.
