Meal Plan Monday

I don’t know how this happened, but there are only fourteen things on the shopping list sitting here next to my laptop.

Granted, we’re having leftover squash soup as one meal (Sous Chef hacked apart a ridiculously large turban squash when we made the soup last week so we have a big bag of it in the freezer). But still. Fourteen. That’s got to be some sort of record.

To prove it, I’ll show you my list (minus quantities):

broccoli

cauliflower

apples

baby spinach

pears

ground beef

chicken thighs

salami

ground turkey

salmon

eggs

Greek yogurt

apple butter

almond milk

It’s a really good thing we’re not buying much food this week, because we just bought two of those zero-gravity recliners, and even with the great deal we got on them, they are not cheap. But considering that we can’t sit on our couch for more than twenty minutes without getting pangs of pain in our backs, I think it’s time we made the long-term lumbar investment.

I can’t wait to have a comfy place to watch Harry Potter and read books and snuggle with my kitty cats.

Wow. I think that may be the most geeky crazy cat lady-ish thing I’ve ever said.

The kale beef burgers we planned last week didn’t happen; neither of us felt like having burgers that night, so I ended up making a broccoli cheese(burger) soup instead. It was freakin’ delicious, but then this happened the next day at lunch and I wanted to cry:

Monday: Salami and Almond-Crusted Salmon with Spinach Pear Salad

Tuesday: Spinach Thyme Turkey Meatloaf with Brussels Sprouts

Wednesday: Lemon-Dijon Garlic Baked Chicken Thighs with Roasted Cauliflower and Apple

Thursday: Upside-Down Shepherd’s Pie with Sweet Potato Mash

Friday: Leftover Squash Soup
