Meal Plan Monday

fuzzy cat slippersThere’s a handy dandy high pressure system pressing down on us from Canada. Because of it, Hurricane Joaquin was pushed out to sea – phew! – and oh, it’s frickin’ freezing outside.

We have been snapped into full-on Thanksgiving-esque weather, nearly two months ahead of schedule. Cold contact lens solution Weather. Forcing yourself out of bed and immediately throwing on a sweatshirt Weather. Wearing fuzzy cat slippers at all times Weather. Piling on the fleece blankets from our respective college years Weather. Pulling out the coats and boots and – gasp! – full-length capri pants Weather.

In short, it’s getting cold. 

And apparently that triggers my body to want to eat all the food, all the time. We’re not talking salads – please, show me someone who actually enjoys salads when it’s 50 degrees outside. We’re talking no holds barred, bring on the carbs because it’s time to fatten up for winter hunger.

Hunger that’s really hard to curb.

Still, we try our best, though I’ll be the first to admit our meal planning isn’t entirely spot on this week. For example, we’re making two desserts: apple pie with an almond meal crust and granola topping, and chewy chai snickerdoodles. The Balance Factor: Sous Chef will be immediately bringing the leftovers to work.

Wednesday: Prosciutto-Wrapped Chicken Strips over Garlic Butter Zucchini Noodles

Thursday: Kale Beef Burgers with Horseradish Sauce and Lemon-Garlic Broccolini

Friday-Sun: Visiting with Family
