Meal Plan Monday

Three weeks ago, in Florida:

Me: I’ve decided I don’t need seasons. Let’s just move here and have it be sunny and warm all the time!

Sous Chef: Nah. You know you’d miss the seasons.

Me: No I wouldn’t. I really wouldn’t. I would rather it be sunny all the time so I can go for walks every day outside and be happy all the time because of all the Vitamin D!

Sous Chef: OK…

A few days later, stepping off the plane to a noticeably crisper and cooler Maryland:

Fall in Maryland

The weather has indeed turned, so that means it’s time for some comfort food. Stews and chilis. Baking and braising. But let’s not forget our goal of doing it in a (mostly) healthy fashion! We’re going to utilize the slow cooker for three meals this week – please keep your fingers crossed that I don’t burn the house down.

There are two changes to this week’s meal plan:

#2. The recipe source. This week, all of the recipes come from eMeals. I started a two-week trial today, and chose the Paleo meal plan (protein + veggies!)

Since we’re going Paleo this week, I ended up buying three huge heads of cauliflower. When I approached our cart with them, all Sous Chef could say was, “Whoa.” 

I will master cauliflower rice if it is the last thing I do.

Monday: Slow Cooker Chicken Sausage and Fennel Soup with Italian Broccoli

Tuesday: Slow Cooker Red Curry Beef with Garlic-Ginger Cauliflower Rice

Wednesday: Slow Cooker Turkey Chili with Sweet Potato-Carrot Hashbrowns

Thursday: Bacon-Apple Turkey Meatloaf

Friday: Teriyaki Chicken with Cauliflower Rice

Saturday: Night off!

Sunday: Sunday Dinner at Dad’s
